Baked Grits

Baked grits
1½ cups regular grits, uncooked
3 cups water
1 cup evaporated milk
¼ cup butter melted
2 eggs, beaten
1 teaspoon salt
1 teaspoon baking powder
Combine grits and water in a heavy saucepan. Bring to a boil; reduce heat, and simmer for 2 to 3 minutes. Remove from heat.
Stir in remaining ingredients, mixing well. Pour mixture into a greased 2 quart casserole. Bake at 425 degrees for 25 minutes. Serve immediately. Yield:8 servings
