 Beef rolls


4 beef cube steaks (about 1 pound)


¼ teaspoon paper


½ teaspoon dried italian seasoning


1 small carrot, peeled


1 medium size green pepper


Vegetable cooking spray


½ cup beef broth


½ cup dry red wine


1 teaspoon paprika


¼ teaspoon hot sauce


1 small onion, chopped



Sprinkle steaks with pepper and Italian seasoning. Cut carrot and green pepper into 3 X 1/4 inch strips. Arrange an even number of vegetable strips in the center of each steak. Roll up steaks; tie with string or fasten with wooded picks.


Coat a large nonstick skillet with cooking spray; place over medium high heat until hot. Add steak rolls, and brown on all sides.


Combine broth, wive, paprika, and hot sauce; pour over steak rolls. Add onion to the skillet. Bring to a boil; cover, reduce heat, and simmer 1 hour or until steak is tender. 



Yield: 4 servings
