Broiled Pork Chops with Robert Sauce

Broiled pork chops with Robert sauce
4 (¾ inch thick) pork loin chops
½ teaspoon salt
¼ teaspoon pepper
Hot cooked noodles
Robert sauce
Sprinkle chops with salt and pepper. Place on rack in broiler pan 3 to 4 inches from heat. Broil 5 to 6 minus on the first side: turn and broil 3 minutes or until browned. Transfer chops to a warm serving platter of hot noodles. Reserve 2 tablespoons of pan drippings for Robert sauce. Spoon Robert sauce over chops and noodles. Yield: 4 servings
Robert Sauce
3 tablespoons chopped yellow onion
1 tablespoon butter
2 tablespoons tarragon vinegar
2 tablespoons drippings
1 cup flour
1 cup milk
2 tablespoons Dijon mustard
1 teaspoon salt
¼ teaspoon pepper
Saute onion in butter in a medium saucepan until tender; add vinegar, and bring to a boil. Combine drippings, flour and milk in a small bowl; gradually add to the vinegar mixture. Stir ina mustard, salt and pepper; boil for 10 minutes, stirring frequently. Yield: about 1 cup
