Brown Rice Pilaf

Brown rice pilaf
1 ¼ cups chicken broth
½ cup uncooked brown rice
½ cup onion, chopped
1 (2 ½ ounce) jar sliced mushrooms, drained
¼ teaspoon pepper
⅛ teaspoon dried whole thyme
½ cup celery, thinly sliced
Combine all ingredients except celery in one quart t casserole. Cover and bake rice mixture at 350 degrees for 1 hour.
Add celery to rice mixture; cover and bake for 10 to15 minutes or until celery is just tender and liquid is absorbed.
Yield: 4 servings
