 Brown sugar peanut brittle



1 cup sugar


1 cup packed brown sugar


1 cup light corn syrup


½ cup water


½ teaspoon salt


¼ cup butter


2 to 3 cups raw peanuts


1 ½ teaspoon baking soda



Butter two 15 X 10 X 1 inch baking sheets; set aside. In a heavy 3 quart saucepan combine the sugars, corn syrup, water and salt. Cook and stir till the sugars dissolve. Continue cooking till mixture boils; stir in the butter. Clip candy thermometer to side of pan. Continue cooking, without stirring, to 230 degrees. Cook and stir to 280 degrees. Stir in the peanuts. Cook, stirring constantly, to 300 degrees. Remove the pan from heat. Quickly stir in the soda, mixing well. Pour onto the buttered pans, spreading evenly. As candy cools, stretch it by lifting and pulling with 2 forks. Break candy into pieces when cooled. 



Makes about 2 pounds
