Chinese Beef and Green Beans

Chinese beef and green beans
¾ pound boneless lean sirloin steak
1 ½ pound fresh green beans
Vegetable cooking spray
1 large onion, coarsely chopped
2 cloves garlic, minced
1 ½ cup beef broth
1 ½ tablespoon cornstarch
3 tablespoons water
1 tablespoon soy sauce
2 cups hot cooked rice
Trim excess fat from steak. Partially freeze steak; slice across grain into 3 x ¼ inch strips. Set aside.
Remove strings for beans; wash and cut into 1 inch pieces. Set aside.
Coat a skillet with cooking spray; place over medium high heat until hot. Add meat, onion, and garlic; stir fry until meat is browned. Add beans and broth; cover. Reduce heat, and simmer for 8 minutes or until the beans are crisp-tender.
Combine cornstarch, water, and soy sauce, stirring until blended; stir into meat mixture. Cook, stirring constantly, until thickened. Served over hot rice.
Yield: 4 servings
