Chocolate Cornstarch Pudding

 Chocolate cornstarch pudding


3 squares baking chocolate

3 cups rich milk

1 cup sugar

¼ cup cornstarch

¼ teaspoon salt

1 tablespoon butter

1 teaspoon vanilla


Melt baking chocolate in a double boiler over simmering water, and add milk. Stir until well blended. Combine together the sugar, cornstarch and salt, and add a small amount of hot chocolate mixture, stirring vigorously. Return to the double boiler and cook until thickened, stirring constantly. Cook for 20 minutes longer. Add butter and vanilla. Spoon into serving dishes and press waxed paper (or seran)

Directly onto the surface of the pudding. Cool and chill. Serve with sweetened whipped cream if desired.
