Christmas Salad

Christmas salad
1 cup pecans roughly chopped
1/3 to ½ cup brown sugar
1 teaspoon cinnamon
1 package of baby spinach
1 cup craisins
1 bottle Raspberry vinaigrette
In a small bowl mix brown sugar and cinnamon together and set aside. Preheat a heavy non-stick pan on the stove. Place pecans in the hot pan and start sprinkling the sugar mixture over the warm pecans while stirring constantly. The sugar will begin to melt sticking to the pecans. When it does pull from heat and set aside to cool.
In your serving bowl put your spinach, nuts and craisins. Just before serving, toss with the vinaigrette to taste.
NOTE:
Any dressing will cause your salad to wilt. So it must be done at the last minute.
The process that I told you for the nuts is actually making a praline that can be used for many things or eaten alone.
