 Coconut custard pie


Use a custard pie recipe adding ½ cup flaked coconut to the mixer. Fill pastry shell; sprinkle top with additional ¼ cup coconut. Serve with whipped cream. 


NOTE

Don’t overbeat the eggs. If you put too much air into the eggs, the custard will be bubbly instead of creamy.

The basic custard recipe can be used in other ways such as: bread pudding or rice pudding.
