2 ½ cups sugar
½ cup light corn syrup
½ cup water
¼ teaspoon salt
2 egg whites
1 teaspoon vanilla
In a heavy 2 quart saucepan stir together in sugar, corn syrup, water, and salt. Clip candy thermometer to side of pan. Cook and stir till sugar dissolves. Continue cooking to 260 degrees; remove from heat. Immediately beat in the egg whites, beating at high speed of an electric mixer. Add the vanilla and continue beating for 4 to 5 minutes or till candy holds its shape. Quickly drop candy from a teaspoon onto waxed paper. Or spread candy into a 10 X 6 X2 inch baking dish and cut into squares.
Makes about 40 pieces
