Glazed Acorn Ring

1 (1 pound) acorn squash
⅓ cup apple juice
½ teaspoon cornstarch
¼ teaspoon cinnamon
Pierce squash 4 to 5 times with a fork, and place on a paper towel in the microwave oven. Microwave at high for 6 or 7 minutes or until soft to the touch, turning squash over after 3 minutes. Let stand for 5 minutes.
Cut squash crosswise to 1 inch thick rings; discard ends and seeds. Arrange rings in an 8 inch square baking dish. Combine apple juice, cornstarch and cinnamon, stirring until blended; pour around squash.
Cover the dish with waxed paper. Microwave at high for 3 minutes or until squash is tender and sauce is thickened; rearrange squash and stir sauce after 2 minutes. Spoon sauce over squash to serve.
