Ham Steak with Orance Rice Stuffing

Ham steak with orange rice stuffing
2 cups cooked regular rice
½ cup raisins
3 tablespoons frozen orange juice concentrate, undiluted
1 egg, well beaten
¼ teaspoon ground nutmeg
¼ teaspoon pepper
2 (1/2 inch thick) center-cut fully cooked ham slices
2 tablespoons firmly packed brown sugar
Combine rice, raisins, orange juice, eff, nutmeg, and pepper in a large bowl; stir well. Place one ham slice in a 1-x8x2 inch baking dish. Spoon rice stirring evenly onto the ham slice, and top with a second ham slice; sprinkle with brown sugar. Bake uncovered at 350 degrees for 35 to 40 minutes. Slice into equal portions. Yield: 6 servings.
