Hash Browns

2 large baking potatoes (apx 1 ½ pound)
2 tablespoons finely chopped onion
¼ teaspoon garlic salt
¼ teaspoon whole thyme
⅛ teaspoon pepper
Vegetable spray
Cook potatoes in boiling water until tender. Cool slightly; peel and shed. Combine potatoes and the next 4 ingredients.
Coat a 10 inch nonstick skillet with cooking spray; place over medium heat until hot. Pack potato mixture firmly ito skillet; cook for 6 to 7 minutes or until bottom is brown.
Invert potato patty onto a plate; return to skillet, cooked side up. Cook over medium heat for 6 to 7 minutes or until the bottom is brown. Cut into wedges to serve.
Yield: 4 servings
