 Herb baked chicken


1 teaspoon dried whole rosemary, crushed

¼ teaspoon pepper

1 (3 pound) broiler-fryer, cut up and skinned

½ cup pineapple juice

¼ teaspoon ground ginger

5 shallots, minced

Paprika


Rub rosemary and pepper into the chicken; arrange, meaty side up in a 9 inch baking dish. 


Combine pineapple juice and ginger; pour over chicken. Sprinkle it with shallots and paprika.


Cover and bake at 350 degrees for 25 to 30 minutes or until done. Yield: 6 servings


NOTE

The internal temperature of chicken needs to reach 165 degrees
