John’s island cornbread
1 cup lard
¼ cup sugar
2 eggs beaten
1¾ cup cornmeal
1¼ cup flour
2 tablespoon baking powder
1 teaspoon salt
1¼ cup milk
1 (14 ounce) whole corn, drained
Combine lard and sugar, beating well. Add eggs; beat well. Sift together cornmeal, flour, baking powder, and salt. Add to creamed mixture alternately with milk., beginning and ending with flour mixture. Fold in corn.
Spoon batter into a greased 13x9x2 inch baking pan. Bake at 450 degrees for 25 minutes or until golden brown. Yield 15 servings.
NOTE
Instead of sugar, I like to use honey powder or honey.
