John's Orange Maple Baby Back Ribs

 John’s Orange maple glazed baby back ribs



3 cups maple syrup


2 cups orange juice


1 cup minced onion


¼ cup orange zest


¼ cup FRESH lemon juice


10 pounds of baby back ribs



Combine the first 5 ingredients in a saucepan. Simmer over medium heat for about 5 minutes, stirring occasionally. Pour sauce into a large bowl and cool. Preheat the oven to 350 degrees. Season racks with salt and pepper on both sides. Arrange on sheet pans and bake for 35 minutes. Cool 15 minutes. Cut racks into individual ribs. Add ribs to sauce in bowl and turn to coat. Return ribs to sheet pan. Bake 30 minutes longer basting twice with remaining sauce. Excellent served as finger food at reception.
