Lemon Squares

Lemon squares
6 tablespoons butter
¼ cup sugar
1 cup flour
2 eggs
¾ cup sugar
2 tablespoon flour
¼ teaspoon lemon zest
3 tablespoons lemon juice
¼ teaspoon baking powder
Preheat the oven to 350 degrees. Grease an 8x8x2 baking pan. Beat butter for 30 seconds; add the ¼ cup sugar and 1⁄4 teaspoon salt, beating till fluffy. Stir in the 1 cup flour. Pat dough onto bottom of pan. Bake for 15 minutes. Meanwhile beat eggs; add remaining ¾ cup sugar, 2 tablespoons flour, lemon zest, lemon juice and baking powder. Beat 3 minutes or till slightly thickened. Pour over the baked layer. Bake for 25 to 30 minutes longer or till light golden brown around the edges and center is set. Cool. Sift powdered sugar over top if desired. Cut into squares. Makes 16
