 Macaroni and cheese with ham 


1 ¾  cups milk, scalded

1 cup (4 ounce) shredded cheddar cheese

1 teaspoon grated onion

¼ teaspoon salt

¼ teaspoon paprika

1/8 teaspoon hot sauce

3 eggs, beaten

1½ cup diced, cooked ham

1 cup elbow macaroni, cooked and drained


Combine milk and cheese in a heavy saucepan; cook over low heat, stirring until cheese melts. Remove from heat; stir in onion, salt, paprika and hot sauce. Gradually stir one-fourth hot mixture into eggs; add to remaining hot mixture, stirring constantly. Stir in diced ham and macaroni. Pour ham mixture into a lightly greased 1 ½ quart casserole. Bake uncovered at 350 degrees for 35 minutes. Yield: 6 servings.
