 Mexi-corn medley


Vegetable cooking spray

2 tablespoons butter

2 cups fresh corn cut from cob

1 cup sliced onion, separated into rings

1/3 cup chopped green pepper

1/3 cup chopped red pepper

¼ teaspoon garlic powder

Dash of red pepper

1 medium tomato, peeled and diced


Coat a large skillet with cooking spray; add butter and place over medium heat until butter is melted. Add remaining ingredients except tomato; cover and cook over medium heat for 7 to 8 minutes or until corn is tender, stirring occasionally.


Stir in tomato; cook, uncovered 2 minutes or until thoroughly heated. Yield: 6 servings.
