Mint Cocoa Cup

 Mint cocoa cup


1 quart milk

¾ cup sugar

6 tablespoons cocoa

1 cup boiling water

1/8 teaspoon mint extract or 3 spays fresh mint

Whipped cream


Scald milk with sugar and cocoa. Add boiling water and beat with a rotary beater. Cool. Add mint extract. Pour over crushed ice; top with a spoonful of whipped cream and garnish with a spray of mint.


NOTE


When using fresh mint, crush the mint, steep 10 minutes in 1 cup boiling water and remove mint. Add scalded milk in place of boiling water.
