No Bake Cookies

No bake cookies
2 cups sugar
¼ cup butter
3 tablespoons unsweetened cocoa powder
½ cup milk
1/3 cup peanut butter
1 ½ teaspoon vanilla
3 cups instant rolled oats
Line 2 baking sheets or the counter with waxed paper.
In a saucepan, combine the sugar, butter, milk, and cocoa powder and bring to a simmer over low heat, stirring until smooth. Simmer for 2 minutes. Remove from the heat and beat in the peanut butter and vanilla. Gradually blend in the oats.
Drop the dough by a spoonful 1 inch apart onto the prepared baking sheets. You may flatten the cookies with the bottom of a glass dipped in water and then in sugar. This part I usually bypass.
