Old Nag Cheese Sauce

 Old Nag Cheese Sauce



4 tablespoon butter


4 tablespoon flour


2 cups milk (approximately)


3 cups Cheddar Cheese, shredded


Salt and pepper to taste



In a skillet, melt butter on medium heat. Add flour and salt and stir until smooth (this is a roux). Slowly pour in part of the milk, stirring constantly until it thickens. Add cheddar and stir until melted. If needed, pour in more milk until you have the consistency you desire. Serve immediately.



NOTE: 


This can be used for many things including potatoes au gratin, macaroni and cheese, and vegetables.


The sharper the cheese the stronger the flavor of the sauce.
