Old Nag Rotten Potatoes (au gratin)

Old Nag Rotten Potatoes
5 potatoes, peeled and sliced
1 medium onion, peeled and diced
1 cup ham diced, or ½ cup bacon crumbled
In a 3 quart casserole dish layer potatoes, ham, onion, and cheese sauce. Repeat. Bake in a 350 oven until lightly brown (approximately 1 ½ hours). Let rest 10 minutes before serving.
NOTE:
If you boil the potatoes before assembling the casserole you will cut cooking time way down.
Velveeta cheese was created to speed up the cooking of dinner. I prefer the flavor of cheddar to velveeta, but it’s not bad.
Use any meat you desire in the place of the ham.
