 Orange glazed carrots


3 medium carrots, peeled and cut into ¼ inch thick slices

3 tablespoon orange juice

1 teaspoon cornstarch

3 tablespoon orange juice

¼ teaspoon orange zest

¼ ground mace


Combine carrots and 3 tablespoon orange juice in a 1 quart casserole; cover with lid, and microwave at high for 5 to 6 minutes or until carrots are crisp-tender, stirring at 2 minute intervals.


Combine cornstarch, 3 tablespoons orange juice, orange zest and mace, stirring until blended; stir into carrot mixture, mixing well. Cover and microwave at high for 1 minute or until thickened, stirring after 30 seconds. Yield: 2 servings
