Oriental Broccoli

Oriental broccoli
¼ cup boiling water
2 tablespoons soy sauce
1 tablespoon dry sherry
1 teaspoon sugar
1 pound bunch fresh broccoli
Vegetable cooking spray
1 teaspoon vegetable oil
1 small onion, chopped
Combine first 4 ingredients; set aside.
Trim off large outer leaves of broccoli, and remove tough ends of stalks. Wash broccoli thoroughly. Cut stalks diagonally into 1 inch thick slices; if stalks are more than 1 inch in diameter, cut in half lengthwise. Cut broccoli florets into 1 inch pieces.
Coat a wok or skillet with cooking spray; allow to heat at medium high for 2 minutes. Add oil and broccoli, and stir fry 2 minutes; add onion, and sir fry an additional 3 minutes add soy sauce mixture; cover and reduce heat to low. Simmer for 5 minutes or until broccoli is crisp-tender. Yield: 4 servings
