 Pancakes


1 egg

1 1/3 cup buttermilk

1½ cup sifted flour 

¼ cup melted butter or oil

2 tablespoons sugar

1 teaspoon baking powder

¾ teaspoon baking soda

¾ teaspoon salt


Heat griddle; grease lightly. Beat eff; add remaining ingredients; blend until all flour is dampened and mixture is fairly smooth. Pour about ¼ cup batter for each pancake on a griddle. Cook until pancakes are puffed and full of unbroken bubbles; turn to brown on the other side. Keep hot in a warm oven. Serve with butter and syrup. Makes about 12 5 inch pancakes.


NOTE


You can add fresh blueberries or chocolate chips to change it up some.
