 Sea foam frosting


1 ¼ cups packed brown sugar

2 egg whites

2 teaspoon light corn syrup of ¼ teaspoon cream of tartar

Dash salt

¼ cup cold water

1 teaspoon vanilla


On top of the double boiler combine brown sugar, egg whites, corn syrup or cream of tartar, and salt. Add cold water. Beat ½ minute at low speed of electric mixer to blend. Place over boiling water (water in bottom of the double boiler should not touch the top pan). Beating constantly with an electric mixer, cook for about 7 minutes or till frosting forms stiff peaks (don’t cook beyond this stage). Remove from heat; add vanilla. Beat about 2 minutes more or till of spreading consistency. Spread on cake. Frosts tops and sides of 3 8 inch layers.
