Shrimp Chow Mein

Shrimp chow mein
1½ tablespoons cornstarch
2 tablespoon water
1 large onion, sliced
1 (2 ounce) can mushroom stems and pieces, undrained
½ cup chicken broth
3 tablespoon soy sauce
1½ pounds unpeeled small fresh shrimp
1 (8 ounce) can sliced water chestnuts, drained
2 cups fresh bean sprouts
1 red or green pepper, cut into 1 inch squares
2 stalks celery; diagonally sliced
Combine cornstarch and water, stirring until blended. Set aside.
Combine onion, mushrooms, broth, and soy sauce in a large skillet; cover and cook over medium-low heat 4 minutes or until onion is tender. Peel and devein shrimp; add shrimp and the next 4 ingredients to the skillet. Cook, stirring frequently, 4 to 5 minutes or until shrimp are done.
Stir in reserved cornstarch mixture; cook, stirring constantly, 1 to 2 minutes or until mixture thickens. Yield: 4 servings
