Shrimp Delight

Shrimp delight
Vegetable cooking spray
1 tablespoon butter
½ pound fresh mushrooms, sliced
2 stalks celery, diagonally sliced
2 green onions, sliced
2 cloves garlic, minced
¼ cup finely chopped green pepper
2 tablespoons minced fresh parsley
1½ pounds unpeeled large fresh shrimp
3 tablespoons lemon juice
8 cherry tomatoes, halved
1/8 teaspoon fresh ground pepper
1 teaspoon capers
2 cups hot cooked vermicelli
Celery leaves
Lemon rind curl
Coat a large skillet with cooking spray; add butter, and place over medium-low heat until butter is melted. Add the next 6 ingredients to the skillet, cover and cook for 8 to 10 minutes or until vegetables are just tender, stirring occasionally.
Peel and devein shrimp; add shrimp and lemon juice to cooked vegetables. Cook uncovered, over medium-high heat for 4 to 5 minutes or until shrimp are done.
Stir in tomatoes, pepper and capers and cook for 1 minute or until mixture is thoroughly heated. Serve over hot vermicelli. Garish with celery leaves and lemon rind curl. Yield 4 servings
