 Standard crust (for 1 crust)


1 cup sifted flour

½ teaspoon salt

1/3 cup shortening

3 tablespoon cold water


Mix flour and salt in a medium bowl. Cut shortening into flour mixture with either 2 knives or pastry blender until shortening is pea size. Add enough cold water to form a ball. Turn out on a floured board. Roll out into a circle ¼ inch thick. Form into a pie plate, fluting the edge. Dock the sides and bottom to release steam. Chill the crust. Fill with desired filling and bake. For the prebaked pie shell press another pie tin inside the pie crust and bake in a 350 degrees oven for about 30 minutes.  Cool and remove the upper pie plate.
