For 1 teaspoon baking powder, substitute ¼ teaspoon baking soda plus ⅝ teaspoon cream of tartar


For 1 ounce unsweetened chocolate, substitute 3 tablespoons cocoa plus 1 tablespoon shortening


For 1 cup heavy cream, substitute 3/4 cup milk plus ⅓ cup butter or margarine


For 1 tablespoon flour, as a thickener substitute 1 ½ teaspoons cornstarch

For 1 tablespoon tapioca, as a thickener in pies, substitute 1 tablespoon flour


For 1 cup shortening, substitute 1 cup lard
