For 1 teaspoon baking powder, substitute ¼ teaspoon baking soda plus ⅝ teaspoon cream of tartar
For 1 ounce unsweetened chocolate, substitute 3 tablespoons cocoa plus 1 tablespoon shortening
For 1 cup heavy cream, substitute 3/4 cup milk plus ⅓ cup butter or margarine
For 1 tablespoon flour, as a thickener substitute 1 ½ teaspoons cornstarch
For 1 clove garlic, substitute ⅛ teaspoon garlic powder
For 1 tablespoon fresh herbs, substitute ½ teaspoon powdered dry
